“Between” is a preposition and prepositions are part of prepositional phrases. Pronouns following prepositions in such phrases are always object pronouns, because they are objects of the preposition.

The object pronoun you need is me, so the correct prepositional phrase is “between you and me.” It can never be “between you and I” because I is only a subject pronoun.
